Independence Day Parfait


Hooray! It's July 4th weekend and this morning I celebrated it at my family's home with my in-laws, relatives, siblings and friends.  Waking up to the sound of laughter, hot coffee brewing and breakfast on the table is what I miss so much about living so far away from my family.  The house is always full of people and the camaraderie of such an environment puts us all in the best of moods (even my grumpy grandfather).   Although sleeping in is an impossibility with all this noise, being around the people that I love and mean the most to me outweighs all of that.   

To celebrate this holiday I made a simple and easy raw morning breakfast treat.  Fresh berries from a local organic farm here in the countryside along with homemade whipped coconut cream and granola.  Layer as you wish - as much or as little of either ingredient.  Then raise your spoon and say cheers with every bite to health, happiness and family - no matter how crazy and wacky they are.




Ingredients for Whipped Coconut Cream

1 cup packed young coconut pulp
2/3 - 3/4 cup coconut water
3-4 drops stevia
8 drops vanilla extract
1/2 teaspoon lemon juice

Directions:
Blend all ingredients for your whipped coconut cream in your blender until smooth.  Store in the refrigerator to chill for a bit, then start building your parfait with raspberries granola and blueberries for a very berry festive July 4th parfait treat!
