My first attempt in making these bars came out better than anticipated. After all, who am I trying to impress, they're for me. Next time I'll make some changes like using buckwheat groats instead of oats for a different taste, but otherwise, the raw goodness of these bars just can't be put into words. Let your taste buds do the talking. It satisfies that evil sweet tooth without making you hate yourself afterwards.
Bottom:
3/4 cup oats or buckwheat groats (those with gluten intolerance can use buckwheat groats)3/4 cup dates
3/4 cup coconut flakes
Top layer:
1/3 cup melted coconut oil1/4 cup maple syrup or 1 cup dates (whichever you prefer)
Juice from 3 lemons
1/2 cup coconut flakes
1 or 2 bananas
For the bottom:
- Pulse---oats or buckwheat groats and coconut shreds in your food processor until they become a rough flour. Add the dates and process until it all sticks together. Press into the bottom of a square baking pan and put in the fridge.
- Blend all the ingredients together until smooth. Spread evenly on to the bottom layer that you've already pressed down nicely on the bottom of your baking pan and set in the fridge overnight. The next day, cut into squares and sprinkle with finely ground coconut flakes and enjoy!
