Why is it that I don't eat zucchini more often? It's such a versatile and nutritious little veggie; What is wrong with me that every time I visit the grocery store I just walk by this oddly shaped thingy and pay it no mind, almost as if to say - with attitude, <i>"Pssshhhh, you ain't got nothing for me zucchini."</i> Well, not today because today is zucchini day and I've made a very hearty and healthy zucchini pasta dish with toasted walnuts to boot. Yum, Yum, and Yum! <br />

First off, it's important to note that zucchini's are loaded with potassium. So you don't have to stuff your face full of bananas all day long like a monkey to get this beneficial nutrient - you can look to the zucchini for some too. Just one cup can provide you with the daily recommended value you need to be super healthy and feeling all kinds of good.<br />

Potassium is vital to our bodies since it helps control blood pressure by reducing the damaging effects of salt in our system. So high-five yourself for that one benefit alone because heart disease is no joke, and too much sodium in the body is dangerous. I think the last time I remember eating zucchini was at a local restaurant in town about 5 months ago. The zucchini wasn't cooked very well and it was kind of soggy and slimy for me. I guess I was a bit turned off by that because I haven't thought about it much since that day until now. <br />

For me, pasta can get some what boring when prepared the same way each and every time - with tomato sauce or something plain like that. But now with the addition of garlic, mint and toasted walnuts, I'm taking what was once a veggie I used to ignore to a very memorable and delicious meal. I think the toasty walnuts are what give this dish a kick in the behind - it's a sure winner in my book.<br />

The aroma of the walnuts roasting in a pan gets me excited. It reminds me of when I was a kid waking up at home on a Sunday morning to the smell of roasted almonds in the oven. It was my dad up early in the A.M. fixing himself his usual healthy morning breakfast bowl - assembling all the ingredients he needed and topping it off with roasted almonds. That's how he always loved his nuts - toasty and cozy, as he puts it. :)<br />

Adding in some hazelnuts (my preferred nut of choice next to almonds) you're not only getting some crunchiness with every bite, but also some really fabulous vitamins that help your skin, bones, joints, nervous system and digestive tract function in tip-top shape.<br />

One last vegetable I don't have very often but still love in many Chinese & Thai dishes are bamboo shoots. They really stimulate the appetite and are also high in fiber, potassium and phytochemicals - said to fight bacteria and viruses. That alone is a good enough reason to eat them more often. In a large serving bowl add in the cooled lentils, hazelnuts and sliced bamboo shoots, then toss gently to combine. Right before serving, pour the olive oil on top, add salt and pepper and toss again to incorporate, then get out your fork and start munching away.....<br />

It makes a table look stunning by drawing in attention - those who've never had it, suddenly become converts to a new way of enjoying a traditional Middle Eastern dish. You can't lose with hummus. I love how healthy this meal is too, full of healthy fats and all kinds of vitamins. Getting high on hummus dip- that's what it's all about (especially for a hummus fiend like me).<br />

4 small beets (peeled, boiled until soft)<br />

Preheat oven to 400 degrees.<br />

<li>Rinse your beets well, then take a fork and pierce them a few times, place them on a small greased baking dish, and cover with aluminum foil. </li>

<li>Roast your beets until they are tender (about 45 to 60 minutes). Set aside to cool. </li>
</ul>

<li>As the beets roast in the oven, starting adding the chickpeas, lemon juice, tahini,
pressed garlic, sea salt, and paprika to the bowl of a food
processor. Don’t combine yet. Set aside.</li>
</ul>
<ul>
<li>When the beets are ready, take them out and let them cool for a bit, then peel them, dice them and add them to the food processor along with the other ingredients already waiting inside. Start the blender and puree.....</li>
</ul>

<li>Puree everything until it's smooth (or chunky, if you like). You may
need to add a tablespoon or two of olive oil to thin out if you like it creamier. </li>
</ul>

Until very recently I was the proud owner of a very big, clunky and noisy electric toothbrush. There wasn't much about it that I loved except for the vibrating rotating bristles. sure to leave a tiny bit of room at the top of your popsicle mold so
they don't overflow when you add the stick. </li>

Whenever my skin needs a little extra tender loving care, calendula salve always comes to my rescue. I've adored this stuff since my mother introduced me to it as a teenager. At first I thought calendula was only good for scrapes and cuts or the occasional insect bite, but then I discovered that calendla oil is also an exceptionally effective remedy against blemishes too.<br />

My grandmother was a phenomenal cook. She passed away a number of years ago but what I remember most about her and really cherished about her visits to the states was her love of cooking. That old saying, "<i>A recipe has no soul, you as a cook must bring soul to the recipe</i>" was all about my grandmother; there's was something special about her food. Someone else could make the same exact dish but it would never taste the same as when her hands touched it. Perhaps it was the love or maybe she sprinkled something else inside her baked goods, I don't know. The delicious aromas that would escape from our kitchen when she was in there is indescribable - we would all rush in to see what she was making. <br />

You never had to beg her to cook anything for you all you had to do was ask her and she would - she loved making people happy that way. <br />

My favorite memories with her were when we'd be in the kitchen together. She'd be preparing something scrumptious in the oven and I'd be eagerly waiting to eat it. I'd sit there watching her craft something out of dough, looking up at her beautiful face and she'd say, ""<i>Pay attention so one day you can make this for your husband, if you feed him well, he'll never leave you</i>." Funny since I was around 10 or 11 years old at the time but I'd just listen because I knew she had to be right. <br />

This recipe is in honor of her. She used to make a really, really gorgeous and yummy plum galette that would have us digging in for seconds, thirds, even sneaking some when no one was looking (Hello, guilty here). I now tailor mine to be vegan but hers was exceptional - made with cinnamon, spice and everything nice - as they say!<br />

<li>In a large bowl go ahead and add your gluten-free flour, cane sugar and sea salt. Then using a pastry blender or two knives, cut in chilled vegan shortening, process everything until small particles are formed resembling the size of peas. </li>

<li>Dribble water, TBS. by TBS, over dough, gently pull dough together by hand or with a rubber spatula. Add additional water, TBS. by TBS, as needed so that dough can form and come together. </li>
</ul>

<li>Gently knead the dough into a mound and then flatten into a disc and cover with plastic wrap and transfer to the fridge to chill for 30 minutes to 1 hour before you begin rolling it. </li>
</ul>

<li>Once the dough is chilled, allow to soften for a few minutes before rolling out. </li>
</ul>

<li>Lay down a piece of parchment paper and dust with flour, begin rolling out dough into 14 inch circle and making sure it's 1/8 inch thick. Transfer to baking sheet and chill again while you move on to make the filling.</li>

<li>Preheat the oven to 400 degrees. </li>
<li>Rinse and slice peaches; set aside.</li>

prepared dough from fridge and roll out. </li>
</ul>

fruit from center out, leaving a 1½-inch to 2-inch border of dough. </li>

<li>Roll dough's border
inward, rotating galette as you go; crimp dough together at fruit's
edge. Be sure that there are no gaps or tears, as juices will leak
during baking. Lightly brush crust's edges with some coconut oil and sprinkle fruit with cane sugar. </li>

<li>Bake
for 45-50 minutes on baking sheet or pizza stone. Crust should be
golden brown with slightly caramelized edges, fruit soft and juices
bubbling. Immediately transfer to a cooling rack; allow to cool
approximately 20 minutes before serving.</li>

<li>Dust with coconut powder (shredded coconut blitzed in the blender until a fine powder). </li>

Over the weekend while grocery shopping a woman walked up to me and asked, "<i>Your hair is so pretty and healthy is it yours?</i>" I smiled. And then like a cartoon character on T.V. I saw this strange thought bubble appear above my head with a picture of my shampoo & conditioner sitting in it as I realized this was the reason for this woman's reaction to my hair. Funny! It may have been an odd way to send a compliment but I understood what she meant and I was flattered by her inquiry. I, of course, shared my secret with her and now I will be sharing it with you too.....<br />

First off, I have to say this: I wasn't born with great hair. I've always had very thick, coarse and hard to manage hair. My sister, on the other hand, has a perfect head of hair - always has, always will I'm sure. (For arguments sake, let's just say we hate her). But me, I've had the mop from hell on my head. For years, even in my early teens, I would always color-treat it, straighten it, curl it, blow-dry it, crimp it - I really put my locks through the ringer. That's probably why I've struggled with it so much, from all the damage that was done. <br />
<br />
Well, using harsh and abrasive commercial brand hair care products didn't help matters either. So, I started researching organic brands. I surfed the net in search of something new and something better to treat this mucky muck I made of my tresses. That's when I found Shea Moisture. I started reading the ingredient list and was left very impressed. Two options faced me - I could either try it or be stuck with brittle, damaged, wicker basket-looking hair.<br />

Never over-wash, it can draw out the valuable oils from the scalp and cause greasy hair do to shampoo and conditioner overload.<br />

I leave my conditioner in for about 5-7 minutes, then rinse with cold water. Sounds crazy but rinsing with cold water near the end of your shower actually prevents frizzy hair and makes hair even that much shiner.<br />

Plus, it restores body, shine and manageability - that's lovely!<br />

Hooray! It's July 4th weekend and this morning I celebrated it at my family's home with my in-laws, relatives, siblings and friends. Waking up to the sound of laughter, hot coffee brewing and breakfast on the table is what I miss so much about living so far away from my family. The house is always full of people and the camaraderie of such an environment puts us all in the best of moods (even my grumpy grandfather). With just the right amount of natural sweetness this is my ideal morning pick-me-up. Fresh from our garden these carrots were ready for the picking. I'm usually a regular green juice gal, but today my remedy for the A.M. grogginess is sitting right in this jar.<br />

When my husband and I moved into our first home the one thing I remember thinking was, "I can't wait to start my own vegetable garden." Growing up in the country my mother had the most beautiful garden full of all kinds of organic produce and rose bushes too. She took so much pride in that garden, all of her time, effort and love went into it, and as a result our meals were always healthy and yes, even lovely flowers garnished our dinner table from time to time. <br />

There's something so satisfying about eating the food that you've grown. Our carrots looked perfect this morning and so in line with my craving for this smoothie. Who says you need a whole tray of produce to make a juice taste great, sometimes it's nice to just keep it simple. <br />

What I love about carrots is the huge array of vitamins and minerals it supplies your whole mind and body. Not just great for the obvious - improving your eyesight, but also doing the same for your digestion, liver, blood sugar, immune system, plus promoting beautiful skin, hair and nails. Whenever my skin is looking a little "off" I just drink this mixture once per day everyday for one week, and my skin gradually starts to improve, my blemishes begin to disappear and my complexion glows. Carrots are just the bomb! (Does anyone ever use that word anymore?)<br />

Parsley is also a favorite of mine, full of rich antioxidants and healing compounds, and makes for an excellent palate cleanser. It gives juices such a vibrant taste that I try using it as often as I can in cooking and in juicing. This year I went all out - I wanted my sister's birthday to be extra special. I've never made a birthday cake before so I took it heart when she asked me to make her one instead of her usual German chocolate cake request from the store. I've been trying to convince her that vegan baking is so much better for you than the stuff she's used to eating and I think this cake may just do the trick. This cake came out so moist, soft and delicious, I wanted to eat it all myself, but I held back the urge - it was hard though!<br />

Growing up with 3 sisters had its challenges. We fought about everything, but mostly clothing, that was the hot topic in our house. Now that we're all older we get along extremely well, and sharing is always something we practice. We visit each other almost every month and have the best time together. In fact, some of the best times I've ever had in life have been in the company of my three sisters. <li>1 cup almond milk</li>
<li>2 tsp. vanilla bean paste</li>
<li>3 TBSP. white wine vinegar </li>

<li>1 tin of coconut milk (refrigerated)</li>
<li>1 tsp. vanilla bean paste</li>
<li>1 tsp. maple syrup</li>

<li>Preheat oven to 180 C. </li>
<li>Grease your 8 inch cake pan with coconut oil.</li>
<li>Combine all of your dry ingredients in a bowl and mix together.</li>
<li>Combine all wet ingredients and mix together.</li>
<li>Pour the wet ingredients into the dry ingredients and mix everything together thoroughly. </li>
<li>Pour the mixture into your 8 inch cake tin.</li>
<li>Bake in oven until golden brown, check if done with toothpick, toothpick should come out clean when inside of cake is done.</li>
<li>Remove cake from oven and let it cool, while the cake is cooling, make your frosting. Remove the refrigerated coconut milk and put into a Vitamix blender or food processor along with your vanilla bean paste and maple syrup. </li>
<li>Put the frosting into the refrigerator for 20 minutes or so until you're ready to frost cake.</li>
<li>Once cake is cool enough, layer the sponge layers and the frosting alternately and decorate with fresh organic fruit, as much as desired.<br /><!--[if gte mso 9]><xml>

I've tasted my share of store bought almond milk before from a variety of different brands and I have to say, my favorite has always been the homemade version. I can tailor it to taste the way I want and it's so much healthier than the ones sitting on grocery shelves for weeks and weeks at a time. Last night after work, I was craving some almond milk so I made my own with this one recipe that I have used over and over again. The purity in flavor can't be beat, it's so delicious and so nutritious that store-bought brands just can't compare to it.<br />

<b>Almond Milk Ingredients:</b></div>

<li>1 cup raw organic almonds soaked overnight</li>
<li>1/2 tsp. Himalayan pink salt </li>
<li>4 cups filtered water (no tap, yuck)</li>
<li>1 vanilla bean pod</li>
<li>raw honey (optional)</li>
</ol>
The one thing about almonds or any nuts for that matter, is that they should be soaked first before consumption or use in any recipe. <br />

<li>Soak your raw almonds overnight in filtered water with 1/2 tsp Himalayan pink salt. </li>
<li>In the morning rinse your almonds well and transfer to Vitamix blender with a little more filtered water to mix. </li>
<li>Blend for several minutes until it's smooth and creamy. </li>
<li>Strain the mixture into a large bowl through a sprout bag or kitchen towel.</li>
<li>Put mixture back into blender with vanilla bean, raw honey, or other sweetener that you prefer. </li>
<li>Pour into glass jar or pitcher and store in fridge for up to one week.</li>
</ol>

On a leisurely Sunday afternoon like this, the only thing that can put a pep in my step is the smell of fresh baked goodies coming from my kitchen. I really enjoy eating a raw food diet, but on occasion I do like vegan recipes and banana bread has always been a favorite of mine. What makes this bread so special is that it has no white table sugar and still has just the right amount of sweetness to make it taste out of this world delish. Who says you need sugar when you can substitute with a healthier alternative? Preheat over to 325 degrees.<br />
<br />
Spray and a large loaf pan with nonstick cooking spray. Set aside.<br />
<br />
First things first, combine the whole wheat pastry flour, baking soda, and Himalayan sea salt in a large bowl and then set aside.<br />
<br />
In a separate
bowl, combine together all the wet ingredients (raw honey, coconut oil, applesauce, vanilla extract) except the bananas.<br />
<br />
Combine
wet with dry ingredients. Mix together really, really well then slowly work in the
bananas. Blend just until combined then fold in the blueberries.<br />
<br />
Bake
at 325 degrees for 1 hour. After an hour do the toothpick test to check that it's done. If toothpick comes out wet, bake for additional 15
minutes until done.<br />

Bread comes out so moist, soft and crumbly, yet with a sweetness that's so nature and not too sugary, the appropriate breakfast food or dessert treat. Enjoy!<b> </b><br />

When I was 15-16 years old, going through the ups and downs of teenage skin, I can remember my mom coming up with wacky ways to help me clear up my face. She was all about the natural and not the pharmaceutical, so she'd open up the fridge and use me as her guinea pig - she believed that if you could eat it, then you could put it on your face to heal blemishes. I love this masque for so many reasons. First, you're probably wondering what I was wondering the very first time I heard about this product: "Does it stink like garlic?" Absolutely not!
